Didn't they even do an episode about this, one of the early Mad Murdoch ones? He has mood ring woman (I think) replicated in the holo deck and 'runs through scenarios' with her. In the end he gets disciplined for being unprofessional and has to delete them all. I'd imagine to make it interesting there was a parallel plot line of alien microbes invading the replicators and making everything taste of cheese or something.
